Vegan Chocolate Orange Tart – The Great British Bake Off Masterclass

This is my vegan version of the chocolate orange tart seen in the third masterclass episode of series five of The Great British Bake Off. I personally quite like this one, chocolate and orange is a favourite flavour combination of mine. Something to bear in mind when it comes to buying vegan white chocolate is that the various brands out there tend to behave differently when you try and melt them.  Through trial and error I’ve personally had the most success with the little bags of dairy free white chocolate buttons you can usually find in the free from section in the supermarkets. Also feel free to do whatever you want with the design on top; I just went with a big swirl. Happy Baking!

Vegan Mini Victoria Sponge Cakes – The Great British Bake Off (S5, E10)

This was one of the three bakes given to the contestants in the final of series five of The Great British Bake Off. This is a pretty straight forward recipe, for my vegan adaptation I’ve used the same basic sponge I’ve used in other recipes. However you do need a very specific cake tin to make these, a 12 cup mini sandwich tin to be precise. Also I just put a buttercream icing in the middle of mine but you could also use the coconut whipping cream recipe I’ve posted previously instead. Happy baking!

Vegan Lemon Tarts – The Great British Bake Off (S5, E10)

This is my vegan version of the lemon tarts seen in the final of series five of The Great British Bake Off. To make these I basically amended the coconut custard recipe I posed previously. Also I didn’t  actually have little three inch pastry cases to hand so I actually made mine a bit bigger in six inch cases and ended up with six of them. Whatever size you make them though they’ll still taste nice and lemony.

Vegan Schichttorte – The Great British Bake Off (S5, E9)

 This recipe is my vegan version of the Schichttorte from series five episode nine of The Great British Bake Off. I just used a simple vegan sponge for this recipe, but because of the grilling technique used to cook the cake in layers I was concerned that if I made the cake batter up all in one go it would be sitting around for too long and the raising agents would stop working. That’s why when you look at the recipe below I have written to make the cake batter twice. The time-consuming grilling technique for this cake is all about showing off a bit of skill and getting those nice lines on the inside of the cake. However, it doesn’t really add much to the flavour or texture, so if you want to keep things simple you could just bake the cake all in one go in the oven, and it’ll still taste just as nice.

Vegan Povitica – The Great British Bake Off (S5, E8)

This was the technical challenge in episode eight series five of The Great British Bake Off. The veganised sweet dough turned out quite well for this recipe. However, I must say I’m not a fan of the filling, I feel it could be a lot more chocolatey. It’s also an absolute nightmare to get the dough that thin and then spread the filling across it, an issue that most of the contestants in the show had as well, so if I was to make it again I’d make the filling a lot more spreadable. Alternatively you could just not bother rolling it out that thin, or even just turn it into Chelsea buns. My suggestions probably aren’t exactly very traditional though. Well anyway, give it a go and decide for yourself.

Vegan Kouign Amann – The Great British Bake Off (S5, E7)

This was the technical challenge in episode seven series five of The Great British Bake Off, and seeing as it’s pretty much just pastry and sugar I wasn’t too sure about it, but having tried them (or should I say my vegan version of them) they’re delicious and very moreish. I only really needed to change one thing about this recipe to make it vegan, and that was the butter. Because the original recipe called for a solid lump of butter I felt that vegan margarine would be too soft as a substitute, and I felt the other obvious substitute, vegetable fat, wouldn’t give a nice favour; so in the end I opted to combine the two. It may seem like a pain doing this but I think it worked out well, just make sure they are thoroughly combined together into one consistent mixture. Other than that the techniques needed to make this pastry are pretty much the same as the original recipe. Enjoy!

Vegan Prinsesstårta – The Great British Bake Off (S5, E6)

This cake was the technical challenge in series 5 episode 6 of The Great British Bake Off, and it seems to involve an awful lot of steps even though it’s just a plain sponge with a cream and jam filling and some green marzipan thrown over the top for good measure. Don’t be put off by all the steps, it is an impressive cake once completed, and if you wanted to simplify it you could just buy some jam and vegan whipping cream like the Soyatoo! stuff and even I used shop-bought marzipan. Also, if like me your rubbish at slicing one big cake into three you could always trying splitting the mixture evenly into three separate tins instead.

Vegan Mini Pear Pies – The Great British Bake Off (S5, E5)

Episdode 5 saw the bakers faced with mini pear pies for the technical challenge. Paul’s recipe is here. If you want to make life easier I don’t see a problem with making this recipe using shop bought puff pastry, the Jus-Rol brand is vegan. However, I wanted to prove a homemade vegan version would turn out just as well; and it did in my opinion. The important thing to remember with pastry is keeping the ingredients cold and not over working it. Also, make sure your other ingredients are vegan, e.g. not all wine is vegan, but these days it’s pretty easy to find vegan wine.  I hope you enjoy them as much as I did.
