This recipe is my vegan version of the Schichttorte from series five episode nine of The Great British Bake Off. I just used a simple vegan sponge for this recipe, but because of the grilling technique used to cook the cake in layers I was concerned that if I made the cake batter up all in one go it would be sitting around for too long and the raising agents would stop working. That’s why when you look at the recipe below I have written to make the cake batter twice. The time-consuming grilling technique for this cake is all about showing off a bit of skill and getting those nice lines on the inside of the cake. However, it doesn’t really add much to the flavour or texture, so if you want to keep things simple you could just bake the cake all in one go in the oven, and it’ll still taste just as nice.
